Menu Plan–November 20

It’s starting to feel like Thanksgiving time around here!  We got about 1 inch of snow on Saturday, picked up our Thanksgiving turkey, pureed a whole bunch of sweet potatoes to get ready to make my favorite sweet potato pie with gingersnap crust and spiced whipped cream, and otherwise solidified our Thanksgiving preparations!  Woot! 

Last week, I planned just a couple of casseroles so that we could cook twice & eat the whole week.  It was wonderful.  We started the week off with our favorite three cheese ziti.

Then, we enjoyed a rare Mexican dish – Mexican Chicken

On Friday night we enjoyed a new recipe for Crockpot French Dip Sandwiches.  It was a nice dinner to end the week. 

I made some whole wheat pumpkin gingersnaps for Bible study on Wednesday, and I was glad I took photos before our friends arrived because there were only 2 cookies left at the end of the night.  I’ll be sharing this recipe soon. 

Oh, I guess the one other dish we had this week as soup (courtesy of my mom!).  This Busy Day Soup is one of our favorites, and my mom was kind enough to send Frog Prince and I home with some. 

With Thanksgiving this week, we’re cooking light – not too many dishes being made in our kitchen until Thursday!!  Then, Friday is our annual Christmas cookie baking day!  I can’t wait.

Buttermilk Pancakes, Raspberries
Homemade pizza (spinach, mushrooms & pepper variety)

Monday
Granola, dried fruit
Ham, Mushroom & Asparagus Quiche, applesauce

Tuesday
Granola, dried fruit
Potato Soup, Pumpkin Dinner Rolls {new}, Salad

Wednesday
Buttermilk Pancakes {freezer}, Raspberries
Leftovers

Thursday – Happy Thanksgiving!
{Thanksgiving Menu}
Chicken Spinach Quiche, Cherry Coffee Cake
Bacon-Wrapped Turkey, Wild Rice Stuffing, Crockpot Squash, Green Beans, etc!
Sweet Potato Pie with Gingersnap Crust & Spiced Whipped Cream, Apple Pie

Friday – Christmas baking day!
Leftover quiche
Leftover turkey sandwiches on Sweet Potato Dinner Rolls {new}
Turkey Noodle Soup {new}

Saturday
